Peter Dissin, owner-operator of Pinefish grew up in the restaurant business.Peter’s father, Henry Dissin, was a legendary restauranteur in the 1960’s, developing countless restaurants in the Philadelphia area, including South Jersey’s Henry’s, Absolutely Gloria’s, and Calico Kitchen.
Peter studied at Cordon Bleu in Paris and honed his skills as a restauranteur at his dad’s establishments and many other restaurants in the Philadelphia area. In the late spring of 2016, Peter opened Pinefish. The concept of Pinefish was to offer complex sauces and preparations for seafood small plates and entrees. You can find Peter in the restaurant every day. He’s tasting sauces, dreaming up new dishes, and sharing his restaurant knowledge with his staff and patrons.
At the end of the day, and especially during the pandemic, we all need and want a little comfort in our lives. Long-time Philly native and chef Ritchie Vargas, spent 20 years cooking and developing recipes at the Palm Philadelphia. Comfort Philly is a collection of Ritchie's favorite recipes that will satisfy Philly's down-home cravings for delicious home-cooked meals. Here's to better days ahead, and in the meantime, let's eat!
